I am just so happy to be over the hump of starting that I feel great! Starting the day out with bacon, plantains and green juice with coconut oil (hope it’s ok to juice on AIP… I’ll have to do some more research)... definitely not feeling deprived. I can already tell I am going to be eating a lot more vegetables.
Took my son to the zoo with some friends. Wasn’t totally prepared for a long day out. Packed lot’s of food… veggies, meat and a little fruit and some homemade plantain chips. Felt a bit spacey. Wondering if it was blood sugar or detox. Stopped at the herb store on my way home to buy some herbs to make a coffee substitute. Would like to come up with that comforting morning beverage to help me make it through. Ordered Sara Ballantyne’s The Paleo Approach Book. Want to do this right and need the support.
Working on my morning “coffee” substitute. For me, it’s not about the caffeine it’s about that comforting experience that the creamy goodness of the bulletproof coffee gave me. Brewed some ginger water with dandelion root, chicory root, cinnamon and vanilla. Blended in a little coconut cream. Decent. Will work on this and post a recipe. Wasn’t sure what to make for breakfast. I have to say, I could have been better prepared prior to starting but just wanted to dive in and make it work. I’m happy I did, just means I’m scrambling a bit. Had some leftover chicken burgers from dinner… decided to make a soup with them… chicken broth, escarole and garlic...YUM!
Feeling pretty good. I think because my diet was pretty clean prior to this endeavor, I am not experiencing any die off symptoms...yay! I am definitely going to get bored with my food unless I start getting creative and adding in some things into my diet that I’m not drawn too… desperate times call for desperate measures ya know! I’m not a huge fan of sweet potatoes, yams or winter squashes but I did pick some up at the market. I went for a squash I’ve never tried… the kombocha squash. Peeled it, cubed it, covered it with some duck fat, sea salt and rosemary and baked it in the oven...DELICIOUS!!!
I will say one of the positive things I can already tell about this experience is that it’s making me eat more vegetables. I did ok before but when you take so many of the offerings away and are left with vegetables guess what… you reach for them. The added bonus is that my family (who are not doing AIP but eat a nutrient dense diet) are eating more veggies too. My 5 year old son has been chowing down my arugula salads (i’ve been adding some sliced apple, cilantro, parsley and an avocado dressing)... something he’s never eaten before. Makes me a happy mama.
Not loving breakfast on AIP. I have a difficult time with breakfast. The morning rush getting my family ready for the day is not conducive for a relaxed meal and good digestion. My go to prior to this was a simple smoothie with coconut or almond milk, whey protein, ground chia and flax and sometimes a little frozen berries or banana. Or on a really rushed morning a spoonful of nut butter. That and a bulletproof coffee and it held me over for a couple hours. This morning I made my morning “coffee” with coconut milk and coconut oil, used my immersion blender to make it nice and frothy and a green juice. It wasn’t enough (I do miss butter) so I heated some leftover soup and made myself eat it… I know I needed some protein.
Planning to get some beef tomorrow to make some jerky. Needing some more satisfying protein snacks and I think jerky will hit the spot.
Got The Paleo Approach in the mail. It’s huge. Hoping to get some time to check it out in the next few days.
