Here’s a great simple treat to make with your kids. With the use of grass fed gelatin you get both protein and gut healing nutrients packed into a little gummy snack. There are some really cute silicone chocolate molds on Amazon (these are the one's I use) that make these treats irresistible. I like putting a couple in my son’s lunch… he’s excited for a treat and I know he’s getting some extra protein and nutrient dense goodness.
1 cup organic pineapple juice (you can either make your own or buy it with no sugar added, preferable not from concentrate. I buy Lakewood Organic Fresh Pressed)
1 tablespoon lemon or lime juice
2 teaspoons raw honey (optional and to taste)
3 tablespoons grass fed gelatin (I use Great Lakes Gelatin)
In a medium sauce pan, bring your juice to a boil. Remove from heat. Add the lemon juice. Gently whisk in the gelatin going slowly so it doesn’t clump. Allow your mixture to cool before adding the raw honey (so it doesn't take the raw out of your honey!). Pour into your molds. Place in the refrigerator and allow to set for 2 hours. Store in an air-tight container in the refrigerator.
* These are also delicious with tangerine juice or cherry juice. You can also add immune boosting nutrients like elderberry or probiotic supplements to make them therapeutic. I think you get the idea, get creative and have some fun with these!
